Peaches from the tree! but not all for me!

GUYS

peaches from my tree.
oh me! oh my!
so.so.so delicious.
absolutely, undeniably plump! sweet! itty bitty and cute!

i ate them plain!
i put them in a cobbler!

look and see!a bit of agave nectar on them.


loadin' em up into the new red ramekins connbonnet purchased for my birthday! (the perfect sized plates of glory...)


the dough!
hehe so cute i had to line them up...and take more photos of the froot'n'doh!

some of them had just peaches

and some of them had peaches and strawberries and cherries!

annnnddddd
i also made one with some leftover corn and sweet potatoes!
mmm put some granulated garlic, basil and a pinch of salt!

microwaved the sweet potatoes in a bit of water for about 7 minutes (turn them over at the halfway mark!)and then the others!


mmm
sprinkled some cinnamon and sugar on the top before baking!

i haven't tried the sweet potato and corn one yet, but the fruit ones had a bit too much juice at the bottom!
hmm...


but still so yummy!

I tweaked the recipe a bit from this wonderful blog: Baking Bites!


for the dough--
1 1/2 cups whole wheat baking flour
1/2 teaspoon baking powder

1/2 teaspoon baking soda
a pinch of salt
1 1/2 tablespoon agave nectar
3 tablespoons butter
1/2 cup milk

1/2 cup sugar
1 egg
teaspoon vanilla extract


1. preheat oven: 375 degrees
2. cut peaches into slices and toss with the agave.
3. put in ramekins (or a baking dish, or whatever you want!)

4. large bowl: whisk 1 1/2 tablespoon agave, sugar, milk, melted butter, vanilla extract and egg until smooth
5. sift flour, b powder, b soda and salt into the liquid mixture and
stir to combine!
6. drop and sorta smooth the dough onto the fruit.
7. i sprinkled some cinnamon sugar on top! (1 tablespoon cinnamon + 1 tablespoon sugaah!)

8. bake for 30 minutes!

seriously.let it cool.
i burned myself.
oh, me.

sprouted grain bread with a dollop of hummus + corn + bell peppahs + cucumbers!
with a side of greek yogurt and blueberries, agave nectar and almonds!
sooo good

i could eat this for every meal!


...wait, no.
i take that back.
sorry.
i need my cereal!
and oats!
and bajillion fruits in the fridge!
and nuts and legumes...

weeeeeeeeeeeeeeeeeeeeeeeee!!!!

today isn't that hot.
but i went swimming.
and it went
swimmingly.
hehe haha hohohoooooo

i am reading a book!
i will let you know how it goes. i also woke up at 6 am.
and then proceeded to finish my huge box of cheerios, crackers and apple chips.
and cherries.
ugh.
cottage cheese and yogurt.
and corn.
and taro.
and watermelon, almonds, almond butter from a spoon, more crackers, strawberry/banana/celery smoothie---
help...

i felt really bad afterwards!
i don't want to do this anymore!!

tomorrow.
i promise.i shall control myself and portion control!!

We eat bell peppers when it's a sweltering 99 degrees

Sorry for not getting on this thing for a bit!

Let me start with yesterday's breakfast!
I had my raw almond butter topped with bahnehnehs on sprouted grain toast!
and cheerios! and cherries! and apples! and apple chips! and
almonds and cashews!
grr gotta stop this craziness.

I forgot to take pictures of my meals yesterday!
Sorry. must have been the 99 DEGREES it was.
crazy heat!

For lunch, I had a delicious concoction of buckwheat noodles with kimchi (yes, i love what some may perceive as stinky cabbage. I LAHHVVVVV EEEEEEEEEEEEETTTTTTTTT!!!) and cucumbers and sesame seeds!
and a cold seaweed soup nomnomnom!


followed that with a heaping plate of peaches, bluebe
rries, cherries and apples.

then went swimming with my lovely roommate!
had to swim circles because there were too many people per lan
e! a lady got really confused and we had to explain to her what was going on!
is this what will happen when we get old?!

at least old people are usually cute.

Then I tried to drive the car without turning on the engine.
no jokes about me being either
a) a woman

b) asian.

dinner was nothing great...
just ate cereal and fruit and bread and crackers and cookies
...i hate when i do this because i end up really full and my
head thinks, "aw, you didn't actually eat a dinner MEAL so you're not full! have 4 more bowls of cereal!"
RAWR!


made my brother a birthday card, succumbed to my weakness and had apple chips and almonds and cashews and 10:30 pm (grr), watched tv, read more of my library books and went to bed!
here's the card!


this morning, woke up at 4 am to see my brother off on his trip!
seriously contemplated eating more apple chips,
slapped myself and tried to go back to bed.

awoke pretty early, as i usually do,

and had

cheerios with almonds, bananas and almond milk

(unfailingly delicious-o!)
blueberries, cherries (pitted!) and apple chips over yogurt!

ah...the tub-o-o's...let me show you what goes on every morning---

my apple chip level.
pretty much demolished a 14 ounce bag in 1 day and a half
so
there's a testament to my eating prowess
...or just my lack of eatroling (eat + control = eatrol! hehe)

then had some apples and peaches and avacado and more banana
and two deliicciouuuuuuuuusssssss

bell peppers!

ahhh
today, the beach!
may make some hummus to take for all to enjoy!
and got a pita bread recipe i want to try!(must save for another day!)

i think the recipe with go a little something liiikkEEEeee:

15 ounces of chickpeas
1/4 cup olive oil
1/2 cup greek yogurt
a bit of lemon juice and a bit o' lemon zest
1/2 cup tahini
cayenne

must try.

Forgot to show you my dinner plate!


hehe so good!

Almond Butter

I think potlucks are one of the best things in the whole wide world!

Yesterday, my friends and I had a little get together and we each brought something to eat!
Here's a list of the dEEEE lish uhs food!


hors d'oeuvres: artichoke hearts and parmesan on toasted baguettes
  • saffron rice with chicken roasted almonds, fried onions, and barberries with pita at the bottom (which was crispy and glorious!). Yogurt to top it!
  • an amazing huge bowl of my favorite...FRUIT!
  • tomato basil pasta with some garlic (i think next time, I will use angel hair pasta. this the time, the noodles were sort of...heavy-ish!)

  • the best quinoa EVER with a guacamole-ish garnish (wanted to take some home so badly but did not want to borrow tupperware hehe)


  • salad with tomatoes and kidney beans (I made this dressing with oranges--from my backyard!-- and olive oil...the recipe called for lemons. i used all the lemons on the tree...sooooooooo oranges were next!)
  • carne asada fries
  • rolls
  • chocolate cake
whoa. HUGE list i know! but everything was so wonderful!
now. about the carne asada fries.
they looked so.good!
but, sadly, i did not eat them.
some of my friends know this about me, but i do not eat red meat!

so let me tell you the story...
my dad and i have extremely sensitive stomachs/digestive systems.
my mother often teases him about it and tells him a man should be able to eat anything and everything rawr!
hehe

i guess we just don't digest it well...
BUT we are having many discussions about what may lie at the foundation of this toilet problem.
currently, we think it's not just
red meat
but oily foods that sit heavy in the stomach
in general!

we both think we're on to something here.
my family...we never really ever ate fast food.
ordering of the pizza from pizza hut?
rare.

i guess another thing is that the asian diet is generally pretty healthy!
so when we eat something that we're not used to, we are a sprintin' to the porcelain throne!
gross, i know.
but it's a major factor of why i eat the way i do! (although i had to come to this conclusion with the help of my dad haha
BECAUSE i love the food i eat; i never thought of it as "oh, i eat this because i have to."
or "i have to eat this--it's my second choice though. i'd rather have a hot dog."
nope!
i would much rather have a fresh tasty beet with some cod! and fresh chives from my uncle's garden!

also.
to clarify: i am not vegetarian, vegan, or whatever!
i love fish!
chicken!

but the important important important thing is
the way
it
is
prepared!

example: if i had a oily, butter saturated piece of fried salmon,
yes, i'd be sick!

so.
that's just a bit of me!

Yesterday, I made some almond butter--which is sort of dangerous because i eat it on EVERYTHING.

a dollop on my overnight oats...

smeared on my banana with dark chocolate mmmm so good!



chicken, egg and kidney beans with rice! (NOT with my almond butter!)

This morning,
I had
apple chips
apples
cantaloupes
almonds
cashews
toast with eggs
and...


ALMOND BUTTER!

i can eat it straight out the trader joe's applesauce jar i cleaned by boiling!

Scary People on buses...have a banana oat pancake!

Today is Tuesday.

So, I must say...

YESTERDAY, as I was waiting for the bus, a man approached me.
He was oldish. He was wearing a button down shirt, and he was definitely not wearing an undershirt.
Because I can say he had old people skin with freckles on his tummy!
hmm...

anyhoo. he started asking me questions that i didn't want to answer.
so i made stuff up (for my own safety!!)

Man: So, you take the bus often?
Me: No...not really...sort of...welll....hmmm hah haaa
Man: What school do you go to?
Me: UCLA
Man: Oh, UCLA. That's a good school. I'm there a lot to teach film classes.
What are you majoring in?
Me: Uhh...biology!

sidenote...WHAT??

blah blah blah

I won't bore you with the entire dialogue,
but in short,
at the end of the conversation,
I was
Erica, third-year UCLA student. Major: biology.
Living on "that street, riiiigghhhtt back there."
And
I regularly watch KCET.
And I exercise sometimes (my response upon his insisting I exercise...).

Work was okay.
I sat at my desk and then left when it was time to go home.

On the bus, there was a scary man.
He said scary things and was mean and scary to a nice old woman.
Hmph.

Came home and had
cod with rice and beans
and
a nice big salad of lettuce, tomatoes, bell peppers and corn!
followed by watermelon, apple chips, corn puffs and banana!
I forgot to take a picture! Sorry.
I will remember tomorrow!

Then, I went for an evening run with some of the best people ever.
we talked and ran
and laughed and ran
and talked and hugged.
so happy!

Ooo!
Tomorrow. our potluck!
Still on the fence about what to make.

A summery chilled carrot soup?
Pasta with summer squash and tomatoes?
Salad with soba noodles?

I was going to bake a pie, but I want to stray off the beaten path a bit this time!
Hmm...though I sort of do want to use my new silicone baking cups!
or my pie dish!
or the beautiful flower shaped cake pan I got for my birthday from my lovely friend!

If I did bake something,
I would want to do
a blueberry pie!
or
snickerdoodle cupcakes.
mmm cinnamon and sugar. delicious.
i do have an awesome honey walnut cake.

so many options!!

sometimes (who am i kidding, all the time),
I wish we all had an abyss for a stomach.
and we could eat and eat and eat and our taste buds would be jumping up and down and nodding with glee
but we'd never eat ourselves sick.

ooo.gluttony.
no, i take it back!

maybe it'd be simpler if i wished for portion control.
hehe

i am going to go on a morning run and then have some oat pancakes!
again, the whole measurements thing is new to me (I usually just look at the consistency of the batter!), but i'm thinking...

1/2 cup oats
1 mashed banana
1/4 cup applesauce
1/4 cup almond milk

but i'll make it tomorrow and return with corrections/confirmation!

I was just planning on oats...

...but, of course, if you know me, you know I didn't stop there.
I bought a 14 ounce bag of apple chips on Saturday, and they are gone (yesterday) and i started a new one today.
I had blueberries, watermelon, an omellete and almonds. and cashews. and a banana.
and cheerios.
And the thing is, it's hard with things like cereal and nuts, because it's hard to say how much i had.
because it's not like 'a small bag of chips.'
no, i purchase my food in bulk because i like the sense of abundance the large quantities lend.
plus, when you have lots of little food, you can't tell how much you're eating.
(bad!!)

Misconception:
You don't get full on healthy food.
NO.
you do. i can testify to that!
and the fullness is often to the point of discomfort!
the thing is, even though they are good for you, it is in moderation.
so, this is what i must work on. think about it, even if you were to eat 18 pounds of lettuce, that's bad!!

got one of those huge boxes of cheerios from costco on Saturday. Done with one bag...

my dolphin jar that used to be full of my favorite raw cashewsa ziplock bag that is hiding from me because it knows i have the scary potential to take away the existence of its contents.


Yes, I do have tupperware containers full of food in every nook and cranny of my room.
See, there? That is a bag of sweet potato twigs and the white containers has my dried apricots and pretzels.

May gross you out? But when I vacuum, I always here the clinkity clink of the vacuum sucking up cheerios, dried fruit, pistachio shells and dried out raisins.
once, i found raisin bran in between my sheets.
It's not that gross. You all eat in bed, don't even lie!

Also, I was taking a shower this morning, and as I took of my nightgown, 3 cheerios fell out!!
I don't know where they were hiding...in the wrinkles?

But really. this is a problem, and I need to redress it.
and i will.



i borrowed this book from the library. needless to say, i'm really excited!
my friends are probably scared about what may ensue upon my true excitement!!
don't worry, guys, there are DELICIOUS WAYS TO EAT THESE! (aka every and any.single.way.ever!)

I woke up early to go on a run before work, but the apple chips distracted me.
darn.
I will go after work!

Excited for the pot luck tomorrow!
